Pastry
300g Cap Kompang
200g butter
5-10g cold water
Egg filling
4 eggs, beaten
140g caster sugar
150g evaporated milk
260g luke warm water |
Egg Custard :
- Dissolve sugar in the lukewarm water.
- Add evaporated milk and eggs into the sugar mixture. Stir till even.
- Strain the mixture and keep in the refrigerator for 30 minutes. (Do not freeze)
Tart’s crust:
- Rub butter in Cap Kompang until crumby.
- Add in cold water and mix till dough is formed.
- Roll out dough and cut into round shapes to fit tart moulds.
- Place the cut dough sheets into tart moulds and pour egg filling into each mould until nearly full.
- Bake at 168°C for 30-40 minutes.
